My kids and I are eagerly anticipating celebrating Dad this Father’s Day. The kids have a great idea to plan all the meals for the day to surprise Dad. Here is what they came up with based on their observations of his favorite foods.
Breakfast – Asparagus with lemons and lobster (Charlie, age 9, knows his Dad likes a savory breakfast)
Lunch – Pizza with rhubarb (Cali, age 3, insists the rhubarb is a pizza topping)
Dinner – Cheeseburgers with roasted garlic (this one sounds good to me)
Read on for an asparagus lemon lobster recipe I created for other Dads to enjoy this Father’s Day (maybe not for breakfast though)!
Ingredients:
2 lobster tails, meat removed and cut into thick pieces
1 bunch asparagus, washed and trimmed
1 heirloom tomato, washed and chopped
1/2 stick unsalted butter
4 lemons, juiced
1 shallot, washed and chopped
Salt, 1 tsp
Garlic powder, 1 ½ tsp
Directions:
Add 1/2 stick butter to sauté pan over medium heat
Add salt to melted butter
Sauté asparagus until just tender
Add garlic powder to pan
Add in the juice of the lemons
Add chopped shallot
Add chopped tomato
Reduce heat to low and simmer all ingredients together for just a few minutes.
Add lobster to the pan and cook for three minutes
Enjoy! Pairs well with a crusty French baguette to soak up the sauce, yum!
