Summer is the perfect time to enjoy fresh peaches. Plentiful throughout July and August, peaches offer plenty of natural sweetness to help satisfy a craving for something sweet. They also provide vitamins A and C, potassium, and small amounts of vitamin K.
Peaches are delicious enjoyed on their own, but they are also incredibly versatile. Try adding sliced or diced peaches to:
- Smoothies
- Yogurt or cottage cheese
- Fresh salads
- Oatmeal
- Grain bowls
Peaches also make a flavorful summer salsa. Sweet, tangy, and slightly spicy, this easy recipe is a delicious way to enjoy your next haul of ripe peaches.
FRESH PEACH SALSA
- 2 cups ripe peaches, approximately 3 medium peaches
- 1/3 cup diced sweet onion, such as Vidalia or Walla Walla
- 1 jalapeño, seeded and diced
- 1 clove garlic, minced
- 3 tablespoons fresh lime juice
- Pinch of salt
- 1 tablespoon chopped fresh cilantro, optional
Peel and pit the peaches, then dice them into small cubes and place them in a medium-sized bowl.
Dice the onion and seed and dice the jalapeño. Mince the garlic, then add the onion, jalapeño, and garlic to the bowl with the peaches.
Add the fresh lime juice, salt, and cilantro, if using. Gently stir until all the ingredients are well combined.
For the best flavor, cover and refrigerate the salsa for at least one hour before serving. This gives the ingredients time to blend and develop their flavors.
Serving Suggestions
Serve this fresh peach salsa with grilled chicken, fish, or pork tenderloin. It also makes a delicious topping for tacos, enchiladas, grain bowls, burgers, and sliders.
