Peach Salsa

Summer is the best time for peaches, they’re plentiful in July and August and their natural sweetness can help satisfy your sweet cravings. Peaches are a great source of vitamins A, C, and K as well as the mineral potassium. Peaches are terrific eaten as is or combined in smoothies, yogurt, cottage cheese, diced in a salad, or topped over a bowl of oatmeal. Peaches also make for a great salsa. Try this easy recipe with your next haul.

– 2 cups ripe peaches, about 3 medium
– 1/3 cup sweet onion such as Walla Walla, or Vidalia, diced
– 1 jalapeno, seeded and diced
– 1 clove garlic, minced
– 3 Tablespoons fresh lime juice
– Pinch of salt
– 1 Tablespoon chopped cilantro, optional

Peel and pit the peaches, then dice into small cubes, place into a medium sized bowl.

Dice onion, seed, and dice the jalapeno and set aside. Mince the garlic clove and add onion, jalapeno, and garlic to the bowl with the peaches. Add the lime juice, salt and the cilantro to the mixture and combine all ingredients until blended well. For the best flavor, refrigerate for at least an hour before serving to allow flavors to blend.

Serve salsa with grilled chicken, fish, or pork tenderloin. It’s also great as a topping on tacos or enchiladas, served atop a grain bowl or used as a dollop on a burger or slider.
