Pumpkin Spice Breakfast Cookies

As soon as the air turns crisp and leaves begin to change, pumpkin spice starts showing up everywhere—and for good reason. These Pumpkin Breakfast Treats are the perfect way to bring that cozy fall flavor into your mornings (or any time of day!).

Made with wholesome ingredients like pumpkin puree, nut butter, and warm spices, these cookies strike a balance between nutritious and delicious. They’re naturally sweetened with maple syrup or honey, and they’re endlessly customizable. Add your favorite mix-ins—whether it’s crunchy nuts, chewy dried fruit, or superfood seeds—for a treat that’s uniquely yours.

These cookies are soft, slightly chewy, and packed with just the right amount of pumpkin spice. They also make a wonderful grab-and-go option when mornings get busy.


INGREDIENTS:

1/2 cup peanut butter or almond butter (creamy or crunchy both work!)

1/2 cup pumpkin puree (not pumpkin pie filling)

1/4 cup pure maple syrup or honey

2 large eggs

1/2 teaspoon vanilla extract

1/2 teaspoon baking soda

2 teaspoons pumpkin pie spice

1/4 teaspoon salt

2 cups mix-ins of your choice, such as:

chopped almonds, walnuts, or pecans

dried cranberries, currants, raisins, chopped dates,

pumpkin seeds, shredded coconut, hemp hearts, chia seeds,

cacao nibs

  • Preheat oven to 350 F.
  • Mix all of the ingredients together and spoon onto a parchment-lined baking sheet. Bake for 12-15 minutes.
  • Allow cookies to cool on a baking rack. Store at room temperature in an air-tight container.  They can be stored in the freezer as well, however, freeze them with parchment in between so they don’t stick together. Makes 16 cookies.
